  • 6 large eggs hard-boiled and peeled
  • 1 ripe avocado
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice freshly squeezed
  • 2 tbsp chopped cilantro
  • salt and black pepper to taste
  • cherry tomato halves for decoration
  • minced chives for garnish

Instructions
 

  • Boil the eggs for 10 to 12 minutes, then place them in cold water and peel once cooled.
  • Slice each egg in half and gently remove the yolks to a small bowl.
  • Mash the yolks with avocado, mayonnaise, lime juice, and cilantro until creamy and smooth.
  • Season with salt and pepper, then spoon or pipe the mixture back into the egg whites in a tall swirl shape, like a Christmas tree.
  • Top each tree with a cherry tomato half and sprinkle with minced chives.

  • Chilling the filling helps maintain its shape when piped.
