  • 4 medium russet potatoes scrubbed and pierced with fork
  • 1 cup shrimp peeled and deveined
  • 2 tbsp butter
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 1 tbsp olive oil
  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat the oven to 400°F. Scrub your potatoes clean and pierce each with a fork. Bake for 45 to 50 minutes until soft inside.
  • While the potatoes bake, heat olive oil in a skillet. Add shrimp, garlic, salt, and pepper. Cook for 2 to 3 minutes on each side until pink and tender.
  • Once baked, slice each potato open and fluff the inside gently with a fork. Add butter and a spoonful of sour cream.
  • Top with shrimp, sprinkle cheese, and return to oven for 5 minutes until the cheese melts beautifully.
  • Finish with a sprinkle of parsley and a dash of extra pepper for color and flavor.

Notes

For extra flavor, try adding lemon zest or cream cheese to the filling. Use larger potatoes if serving as a main course. Perfect for holiday dinners or a cozy night in.
