These eggrolls are filled with beef, bacon, jalapeños, and melty cheese all wrapped in a golden-crisp shell. Perfect for parties, snacks, or anytime you need a spicy, crunchy bite.

Ingredients
  

  • - 1/2 lb ground beef
  • - 6 slices thick-cut bacon
  • - 1 block 8 oz cream cheese, softened
  • - 1 cup sharp cheddar cheese shredded
  • - 2 fresh jalapeños diced
  • - 1/4 cup red onion finely chopped
  • - 1/2 tsp kosher salt
  • - 1/2 tsp black pepper
  • - 1/2 tsp garlic powder
  • - 10 eggroll wrappers
  • - Oil for frying

Instructions
 

  • Cook bacon until crispy. Drain and chop.
  • Brown the ground beef with salt, pepper, and garlic powder. Let cool.
  • In a large bowl, combine cream cheese, cheddar, beef, bacon, jalapeños, and onion.
  • Spoon mixture into center of wrapper. Wet edges and roll tightly.
  • Fry in hot oil (375°F) until golden, about 2 minutes per side.
  • Drain on paper towels. Serve with dipping sauce.

Notes

  • Let filling cool before wrapping to prevent tearing.
  •  Freeze pre-rolled eggrolls for quick snacks later.
  •  For less heat, remove jalapeño seeds and ribs.
  • Can be air-fried or baked for a lighter option.
