Equipment

  • Baking Dish
  • Large Mixing Bowl
  • Oven

Ingredients

Main Ingredients

  • 2 cups cooked rice
  • 2 cups chicken breast cooked and diced
  • 2 cups broccoli florets lightly steamed
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup cheddar cheese shredded
  • 2 tbsp butter melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Instructions

  • Preheat your oven to 375°F and lightly grease a baking dish.
  • In a large bowl, mix the cream of chicken soup, melted butter, garlic powder, onion powder, salt, and pepper.
  • Add the cooked rice, steamed broccoli, and diced chicken to the bowl. Stir until everything is coated in the creamy sauce.
  • Pour the mixture into your baking dish and spread it evenly.
  • Top with shredded cheddar cheese for that gooey, golden crust.
  • Bake for 25 to 30 minutes until bubbly and hot throughout.

Notes

Don’t use raw rice, or it won’t cook evenly in the oven. Avoid over steaming the broccoli, or it can turn mushy after baking. Don’t skip the cheese topping; it gives the casserole a beautiful golden layer and extra flavor.
