  • 1 cup 200g granulated sugar
  • 2 large eggs
  • 1/3 cup 40g unsweetened cocoa powder
  • 1/2 cup 65g all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • For the Cookie Layer:
  • 1/2 cup 115g unsalted butter, softened
  • 1/3 cup 70g brown sugar
  • 1/4 cup 50g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups 160g all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup 130g semi-sweet chocolate chips

Instructions
 

  • Prepare the Brownie Batter:
  • In a microwave-safe bowl or saucepan, melt 1/2 cup (115g) unsalted butter until smooth. Let it cool slightly.
  • In a large mixing bowl, whisk together the melted butter, 1 cup (200g) granulated sugar, and 2 large eggs until smooth and slightly frothy. Stir in 1/2 teaspoon vanilla extract.
  • Sift in 1/3 cup (40g) unsweetened cocoa powder, 1/2 cup (65g) all-purpose flour, and 1/4 teaspoon salt. Gently fold the ingredients until just combined. Avoid overmixing.
  • Set the brownie batter aside.
  • Prepare the Cookie Dough:
  • In a separate bowl, beat 1/2 cup (115g) softened unsalted butter, 1/3 cup (70g) brown sugar, and 1/4 cup (50g) granulated sugar together until light and fluffy.
  • Add 1 large egg and 1 teaspoon vanilla extract, and beat until fully combined.
  • Gradually add 1 1/4 cups (160g) all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt to the wet mixture. Mix on low speed until a dough forms.
  • Fold in 3/4 cup (130g) semi-sweet chocolate chips using a spatula, distributing them evenly throughout the dough.
  • Assemble the Brookie Cookies:
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Using a tablespoon, scoop portions of the brownie batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Using a separate tablespoon, scoop portions of the cookie dough and place them on top of each brownie batter scoop. Gently press down to slightly flatten and adhere the layers together.
  • Bake:
  • Bake in the preheated oven for 12-15 minutes, or until the edges are set and the centers are still slightly soft.
  • Take the cookies out of the oven and let them rest on the baking sheet for 5 minutes before moving them to a wire rack to cool fully.
