Ingredients
  

Pastry Ingredients

  • 1 sheet puff pastry Thawed completely before use.
  • 1 egg egg (for egg wash) Beaten for brushing on pastry.

Filling Ingredients

  • 2 large onions, thinly sliced They will caramelize and sweeten during cooking.
  • 2 tablespoons olive oil For sautéing onions.
  • 1 teaspoon sugar To help caramelize the onions.
  • 1 teaspoon salt Season onions.
  • 4 ounces goat cheese, crumbled Adds creaminess and tang.

Garnish

  • to taste Fresh thyme or rosemary Optional garnish for extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large pan, heat the olive oil over medium heat. Add the sliced onions.
  • Sprinkle the onions with sugar and salt. Stir them gently.
  • Cook the onions for about 15 minutes, until they are soft and golden, stirring occasionally.
  • Roll out the puff pastry on a floured surface. Cut it into squares or circles.
  • Place the puff pastry pieces on a baking sheet lined with parchment paper.
  • Top each piece of pastry with a spoonful of caramelized onions.
  • Sprinkle crumbled goat cheese over the onions.
  • Beat the egg and brush the edges of the pastry with it for a nice golden color.
  • Optional: Add fresh thyme or rosemary on top for extra flavor.
  • Bake in the preheated oven for 20 to 25 minutes, until the pastry is puffed and golden brown.
  • Remove from the oven and let cool slightly before serving.

Notes

To ensure perfect tarts, don’t rush the caramelization of the onions. Avoid using wet puff pastry; ensure it’s thawed completely. Don’t skip the egg wash for a beautiful finish. Leftovers can be stored in an airtight container in the fridge for up to three days.
