  • 1 lb ground beef browned and drained
  • 3 cups cooked rice
  • 2 cups cheddar cheese shredded, divided
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup approx. 10.5 oz
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a medium casserole dish.
  • In a skillet, melt butter and sauté onion and garlic until soft and fragrant.
  • Add ground beef and cook until browned. Drain any excess fat.
  • Stir in cream of mushroom soup, milk, and half of the shredded cheddar cheese. Mix until creamy.
  • Add the cooked rice and stir everything together to coat evenly.
  • Pour the mixture into the prepared casserole dish and spread evenly.
  • Top with the remaining cheese and bake for 25 to 30 minutes, until golden and bubbly.
  • Let it cool slightly before serving to allow flavors to settle.

Notes

You can customize the recipe with veggies like bell peppers, mushrooms, or corn. To spice it up, try paprika or chili powder. Freezes well and perfect for meal prep.
