Cheesy Ranch Potatoes & Sausage

Ingredients
  

  • - 4 medium russet potatoes diced
  • - 1 lb smoked sausage sliced thick
  • - 1 packet ranch seasoning mix
  • - 1 cup shredded cheddar cheese
  • - 2 tbsp olive oil
  • - 2 tbsp melted butter
  • - ½ tsp garlic powder
  • - ½ tsp onion powder
  • - Salt and pepper to taste
  • - Optional: fresh chopped parsley

Instructions
 

  • Preheat oven to 400°F. Grease a 9x13 casserole dish.
  • In a bowl, mix potatoes, sausage, olive oil, butter, ranch seasoning, garlic powder, onion powder, salt, and pepper.
  • Transfer to the casserole dish and bake uncovered for 25 minutes.
  • Sprinkle with cheddar cheese, return to oven for 15 minutes until golden and bubbly.
  • Garnish with parsley and serve hot.

Notes

  • You can prep the dish in the morning and bake it later.
  • For extra crisp, broil the top for 2 minutes at the end.
  • Frozen potatoes work well too, just don’t thaw first.
  • Add chopped peppers or green beans for a veggie-packed version.
