- - 4 medium russet potatoes diced
- - 1 lb smoked sausage sliced thick
- - 1 packet ranch seasoning mix
- - 1 cup shredded cheddar cheese
- - 2 tbsp olive oil
- - 2 tbsp melted butter
- - ½ tsp garlic powder
- - ½ tsp onion powder
- - Salt and pepper to taste
- - Optional: fresh chopped parsley
Preheat oven to 400°F. Grease a 9x13 casserole dish.
In a bowl, mix potatoes, sausage, olive oil, butter, ranch seasoning, garlic powder, onion powder, salt, and pepper.
Transfer to the casserole dish and bake uncovered for 25 minutes.
Sprinkle with cheddar cheese, return to oven for 15 minutes until golden and bubbly.
Garnish with parsley and serve hot.
- You can prep the dish in the morning and bake it later.
- For extra crisp, broil the top for 2 minutes at the end.
- Frozen potatoes work well too, just don’t thaw first.
