Chicken Carnitas (Slow Cooker or Instant Pot)

Juicy, citrus-kissed shredded chicken crisped to perfection. ideal for tacos, bowls, or lettuce wraps.

Ingredients
  

  • - 2 lbs boneless chicken thighs
  • - 1/2 cup orange juice
  • - Juice of 1 lime
  • - 1 small onion chopped
  • - 3 garlic cloves minced
  • - 1 tsp cumin
  • - 1 tsp smoked paprika
  • - 1 tsp oregano
  • - Salt & pepper to taste
  • - 1 tbsp olive oil for broiling

Instructions
 

  • Mix spices and rub onto chicken.
  • Add chicken, onion, garlic, citrus juice into slow cooker or Instant Pot.
  • Cook accordingly: 6-7 hrs on low or 15 min high pressure.
  • Shred chicken, broil with olive oil and some juice for 5 mins until crispy.
  • Serve as desired!

Notes

  • Use bone-in thighs for extra flavor.
  • Don’t skip broiling for crispy texture.
  • Can be frozen after broiling.
  • Perfect with cauliflower rice or tortillas.
