Ingredients
  

Chimichurri Sauce

  • 1 cup fresh parsley packed
  • 4 cloves garlic
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lime juice fresh
  • 1/2 tsp crushed red chili flakes
  • 1 tsp salt
  • 1/2 tsp black pepper

Chicken

  • 8 chicken thighs boneless, skinless

Instructions
 

  • Prepare the chimichurri sauce by blending parsley, garlic, red wine vinegar, olive oil, chili flakes, lime juice, salt, and pepper until smooth but still a bit chunky.
  • Place chicken thighs in a bowl and coat them with half of the sauce. Let them marinate for at least 30 minutes for the best flavor.
  • Preheat the grill to medium heat. Cook the chicken thighs for about 6 to 8 minutes on each side until golden and cooked through.
  • Brush with extra chimichurri sauce right before serving for that rich, herby finish.
  • Serve warm with a side of rice or fresh salad for a full meal.

Notes

Do not skip marinating time – it allows the chimichurri to flavor the chicken deeply. Avoid bottled lime juice; fresh makes a big difference. Grill just until done for juicy results.
