Filling

  • 1.5 cups mashed potatoes
  • 1 cup corned beef shredded or chopped
  • 1 onion sautéed and chopped
  • 1 tbsp butter
  • 1 egg beaten, for brushing
  • 2 pie crusts 1 for base, 1 for top
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp salt or to taste

Instructions
 

  • Preheat the oven to 375°F (190°C). Prepare your pie dish with the bottom crust.
  • In a bowl, mix corned beef, mashed potatoes, and sautéed onions until smooth and creamy.
  • Season with salt and pepper, then spoon the filling into the crust and spread evenly.
  • Place the top crust over the filling, seal the edges, and brush with beaten egg for a glossy finish.
  • Bake for 35 to 40 minutes until golden brown and crisp. Let it rest for 10 minutes before slicing.

Notes

Do not overwork the crust to keep it flaky. Avoid adding too much liquid to the filling to prevent sogginess. Resting after baking helps the pie set and improves slicing.
