  • 2 bananas medium ripe
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 cup almond milk unsweetened
  • 1/2 cup Greek yogurt plain, full-fat
  • 1 tbsp chia seeds optional, for thickness

Toppings

  • 1/2 cup gluten-free cookies crushed, for layering
  • banana slices optional, for garnish

Instructions
 

  • Blend the cottage cheese, bananas, honey, vanilla extract, and almond milk in a blender until smooth and creamy.
  • Pour the blended mixture into a bowl and gently fold in Greek yogurt to add fluffiness.
  • If using, stir in chia seeds and refrigerate for 1–2 hours until the pudding thickens.
  • Layer the pudding in serving cups with crushed gluten-free cookies and banana slices.
  • Chill for at least 30 minutes before serving. Optionally top with cinnamon, nuts, or a drizzle of peanut butter.
