Ingredients
  

Cheese Log Base

  • 8 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper freshly ground

Filling & Coating

  • 1/2 cup dried cranberries plus extra for coating
  • 1/2 cup chopped pecans plus extra for coating
  • fresh parsley optional, chopped for garnish

Instructions
 

  • In a large bowl, combine softened cream cheese, shredded cheddar cheese, honey, salt, and pepper until smooth.
  • Fold in the dried cranberries and chopped pecans until evenly distributed.
  • Lay a piece of plastic wrap on the counter and spoon the mixture onto it. Shape into a log using your hands.
  • Roll the log in additional cranberries and pecans to coat. Wrap in the plastic wrap and refrigerate for at least 1 hour before serving.

Notes

  • Let the cheese log sit at room temperature for about 10 minutes before serving to make spreading easier.
  • You can prepare this up to 2 days ahead just wait to roll it in toppings until right before serving for best presentation.
