Cheese Log Base
- 8 oz cream cheese softened
- 1 cup sharp cheddar cheese shredded
- 1 tbsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper freshly ground
Filling & Coating
- 1/2 cup dried cranberries plus extra for coating
- 1/2 cup chopped pecans plus extra for coating
- fresh parsley optional, chopped for garnish
In a large bowl, combine softened cream cheese, shredded cheddar cheese, honey, salt, and pepper until smooth.
Fold in the dried cranberries and chopped pecans until evenly distributed.
Lay a piece of plastic wrap on the counter and spoon the mixture onto it. Shape into a log using your hands.
Roll the log in additional cranberries and pecans to coat. Wrap in the plastic wrap and refrigerate for at least 1 hour before serving.
- Let the cheese log sit at room temperature for about 10 minutes before serving to make spreading easier.
