  • 4 boneless chicken breasts thin-cut or sliced in half
  • 8 oz cream cheese full-fat, room temperature
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 1 tbsp olive oil for cooking

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning.
  • Place chicken in skillet in a single layer. Cook 4–5 minutes per side until golden and just cooked through. Remove and set aside.
  • Add more oil if needed. Sauté garlic for 30 seconds until fragrant.
  • Pour in chicken broth and bring to a simmer, scraping up browned bits from the pan.
  • Add cream cheese in chunks. Stir until smooth and fully melted. Taste and adjust seasoning.
  • Return chicken to pan and simmer for 5 more minutes, spooning sauce over the top.
  • Serve hot with your favorite side. Spoon extra sauce over the chicken.

Notes

To avoid lumps, always use room temperature cream cheese. This dish also works well with chicken thighs. For variety, stir in mushrooms, spinach, or top with shredded cheese for a casserole version.
