  • 12 oz rigatoni pasta
  • 1 lb Italian sausage casings removed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • salt and black pepper to taste
  • 2 tbsp fresh basil chopped

Instructions
 

  • Boil the rigatoni pasta until al dente. Drain and set aside.
  • In a large pan, heat olive oil over medium heat. Add Italian sausage and cook until browned.
  • Stir in garlic and tomato paste, cooking for 1 minute until fragrant.
  • Pour in heavy cream and stir until smooth. Let it simmer until thickened.
  • Mix in cooked rigatoni pasta and toss until coated with the creamy sauce.
  • Sprinkle Parmesan cheese and chopped basil before serving warm.

Notes

Reserve some pasta water to thin out the sauce if it becomes too thick. You can substitute turkey sausage for a lighter version, or add vegetables like spinach or mushrooms for more flavor and nutrition.
