- 24 slices salami 4-inch rounds, spicy or classic
- 8 oz cream cheese softened
- 2 oz goat cheese optional, for tang
- 1/4 cup roasted red peppers chopped
- 2 tbsp fresh basil chopped
- 6 cherry tomatoes quartered
- balsamic glaze optional, for drizzling
Preheat the oven to 400°F (200°C). Lightly spray a standard muffin tin with cooking oil.
Place a slice of salami over each muffin cup and press gently to form a bowl shape. Use a small foil ball to help shape if needed.
Bake for 7–9 minutes until edges are crispy. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
In a mixing bowl, combine cream cheese and goat cheese (if using) until smooth. Fold in roasted peppers and chopped basil.
Pipe or spoon the cheese mixture into each cooled salami cup.
Top each cup with a cherry tomato quarter, an extra basil sliver, and a drizzle of balsamic glaze if desired. Serve immediately.
