This Crock Pot Corned Beef & Cabbage is a warm, hearty meal that cooks itself while you go about your day. Tender corned beef, soft cabbage, and creamy potatoes make this one of the most comforting slow cooker meals.
Place the corned beef brisket in the slow cooker with the seasoning packet. Pour in beef broth until the meat is nearly covered.
Add carrots, potatoes, onion, garlic, and bay leaf. Cover and cook on low for 8 to 9 hours or until the beef is tender.
In the last hour, add cabbage wedges on top and continue cooking until soft. Slice the beef and serve warm with mustard or horseradish.
Notes
Do not add cabbage too early or it will turn mushy. Add it in the last hour. Rinse the corned beef before cooking to reduce saltiness. For leftovers, store in an airtight container for up to 4 days in the fridge.
