  • 2 lbs boneless skinless chicken breasts or thighs fresh or thawed
  • 1 cup bottled teriyaki sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar for sweetness
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated

  • 1 cup pineapple chunks optional, for sweetness
  • 1 bell pepper sliced, optional

Instructions
 

  • Lightly coat the crockpot with cooking spray to prevent sticking.
  • Place the chicken in an even layer at the bottom of the crockpot.
  • In a bowl, mix together teriyaki sauce, soy sauce, honey, garlic, and ginger.
  • Pour the sauce mixture over the chicken, ensuring all pieces are coated.
  • Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is tender and fully cooked.
  • Remove the chicken and shred or slice as desired. Return it to the sauce and stir to coat.
  • Serve warm over rice, noodles, or with steamed vegetables.

Notes

Use pre-minced garlic and ginger to save time, or line the slow cooker with a liner for quick cleanup. This dish stores well and freezes beautifully for future dump-and-go meals.
