Main Ingredients
- 2 cups fresh black eyed peas
- 1 tbsp olive oil
- 1 onion diced
- 2 garlic cloves minced
- 1 carrot chopped
- 1 celery stalk chopped
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 bay leaf
- salt & pepper to taste
- 1 cup spinach optional
Heat olive oil in a large pot. Add onions and garlic, cooking until soft and fragrant.
Stir in carrots and celery. Let them soften for about 5 minutes to build a flavorful base.
Pour in the fresh black eyed peas, vegetable broth, paprika, bay leaf, salt, and pepper.
Bring to a boil, then lower heat and simmer for 40 to 45 minutes until tender and creamy.
