  • 8 chicken thighs bone-in or boneless
  • 1/4 cup brown sugar
  • 1/2 cup barbecue sauce
  • 2 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1/2 tsp black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C) or heat a grill to medium-high. Pat the chicken thighs dry with paper towels.
  • In a bowl, mix barbecue sauce, brown sugar, soy sauce, garlic, olive oil, and black pepper.
  • Coat each piece of chicken thoroughly in the marinade mixture.
  • Place chicken on a lined baking sheet for oven cooking, or directly on grill grates. Cook for 25–30 minutes, turning once and basting with extra sauce halfway through.
  • Remove when the chicken is deeply caramelized and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.

Notes

Do not overcrowd the pan or grill — this allows proper caramelization. Marinate ahead for more flavor. Great with mashed potatoes or roasted veggies.
