Ingredients
  

  • - 1 can black beans rinsed and drained
  • - 1 can black-eyed peas rinsed and drained
  • - 1 cup corn fresh, canned, or frozen
  • - 1 cup cherry tomatoes halved
  • - 1 red bell pepper diced
  • - 1 green bell pepper diced
  • - 1/2 red onion finely chopped
  • - 1 jalapeño deseeded and minced (optional)
  • - 1/3 cup chopped cilantro
  • - Juice of 2 limes
  • - 1/4 cup olive oil
  • - 2 tbsp red wine vinegar
  • - 1 garlic clove minced
  • - 1/2 tsp cumin
  • - 1 tsp sugar
  • - Salt and pepper to taste

Instructions
 

  • Dice all fresh vegetables into uniform, bite-sized pieces.
  • Rinse and drain the beans and corn thoroughly.
  • In a small bowl or jar, mix olive oil, vinegar, lime juice, garlic, cumin, sugar, salt, and pepper.
  • Combine beans, corn, and chopped veggies in a large mixing bowl.
  • Pour dressing over and gently toss to coat evenly.
  • Refrigerate for at least 1 hour before serving to let the flavors meld.

Notes

  • Add avocado just before serving for creamy texture.
  • Stir tomatoes in at the end to prevent sogginess.
  • Use only black beans if black-eyed peas aren’t available.
  • Store in an airtight container for up to 4 days in the fridge.
