- - 1 can black beans rinsed and drained
- - 1 can black-eyed peas rinsed and drained
- - 1 cup corn fresh, canned, or frozen
- - 1 cup cherry tomatoes halved
- - 1 red bell pepper diced
- - 1 green bell pepper diced
- - 1/2 red onion finely chopped
- - 1 jalapeño deseeded and minced (optional)
- - 1/3 cup chopped cilantro
- - Juice of 2 limes
- - 1/4 cup olive oil
- - 2 tbsp red wine vinegar
- - 1 garlic clove minced
- - 1/2 tsp cumin
- - 1 tsp sugar
- - Salt and pepper to taste
Dice all fresh vegetables into uniform, bite-sized pieces.
