  • 1 large cooked rotisserie chicken meat removed and chopped
  • 2 cups cooked rice or pasta
  • 1 can cream of chicken soup
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables
  • salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Instructions
 

  • Remove all meat from the rotisserie chicken and cut into bite-sized pieces.
  • Cook rice or pasta according to package directions and set aside.
  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add frozen mixed vegetables and cook for 4 to 5 minutes until tender.
  • Stir in chicken, cream of chicken soup, garlic powder, salt, pepper, and cooked rice or pasta. Mix until well combined.
  • Transfer the mixture to a greased baking dish.
  • Top evenly with shredded cheese.
  • Bake for 25 to 30 minutes until bubbly and lightly golden.

Use microwave rice and pre-shredded cheese to save time. Swap vegetables or seasonings based on your family's taste. This recipe is great for freezing—wrap tightly and store for up to 2 months.
