Stuffed Mushroom Ingredients

  • 16 baby bella mushrooms stems removed and chopped
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 4 oz cream cheese softened
  • 1/4 cup parmesan cheese grated
  • 2 tbsp breadcrumbs plus more for topping
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Clean mushrooms with a damp cloth and remove stems. Finely chop the stems and set mushroom caps aside.
  • Heat olive oil in a skillet. Sauté chopped mushroom stems and minced garlic until fragrant, about 3 minutes.
  • In a bowl, mix sautéed mushroom stems with cream cheese, parmesan, parsley, and 2 tablespoons breadcrumbs until smooth.
  • Stuff each mushroom cap with the filling. Top with extra breadcrumbs and drizzle with olive oil.
  • Bake for 18–20 minutes or until mushrooms are tender and tops are golden.
  • Serve warm, garnished with extra parsley if desired.

Notes

  • Wipe mushrooms clean instead of rinsing to avoid sogginess.
  • Make ahead and refrigerate before baking.
  • Customize filling with bacon or sausage for variation.
