- - 1 fresh salmon fillet
- - 8 rice paper wrappers
- - 1 carrot julienned
- - 1 cucumber julienned
- - 1 red bell pepper sliced thin
- - Fresh mint and cilantro
- - 1 cup rice noodles
- - 3 tbsp peanut butter
- - 2 tbsp soy sauce
- - 2 tbsp lime juice
- - 1 clove garlic minced
- - 3 tbsp warm water
Bake salmon with salt, pepper, and seasoning until flaky. Cool completely.
Slice carrots, cucumber, and red bell pepper.
Soak rice noodles until soft, then drain.
Mix peanut butter, soy sauce, lime juice, garlic, and water for dipping sauce.
Dip rice paper in warm water until pliable.
Fill with salmon, noodles, veggies, and herbs. Fold and roll tightly.
