Ingredients
  

Beef Filling

  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 1 cup tomato sauce

Assembly

  • 8 tortillas soft flour or corn
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 tbsp olive oil
  • fresh cilantro chopped, for garnish

Instructions
 

  • Warm a skillet and add olive oil. Cook the onion and garlic until soft and fragrant.
  • Add the ground beef and cook until browned. Stir in taco seasoning and tomato sauce. Let it simmer for 5 minutes until thick and saucy.
  • Fill each tortilla with beef and cheese. Roll tightly and place seam side down in a baking dish.
  • Top with more sauce and cheese. Bake at 375°F (190°C) for 20 minutes until bubbly and golden.
  • Garnish with chopped cilantro before serving warm.

Notes

To avoid messy enchiladas, don’t overfill the tortillas and always drain the ground beef to reduce grease. Great with rice or a side salad. Can be made ahead or frozen for busy weeknights.
