Ingredients
  

Meat Mixture

  • 1 lb ground beef 80/20 blend preferred
  • 1/2 lb Italian sausage hot or mild, casing removed

Vegetables & Seasoning

  • 1 green bell pepper diced
  • 1 yellow onion diced
  • 1 clove garlic minced
  • 1 tbsp Worcestershire sauce

Assembly

  • 4 whole wheat sandwich rolls or hoagie rolls
  • 8 slices provolone cheese or more, to taste
  • spicy aioli optional, for serving

Instructions
 

  • Heat a large skillet over medium heat with a drizzle of oil. Add ground beef and sausage. Cook, breaking apart with a spoon, until browned and no longer pink. Drain excess grease, leaving a little for flavor.
  • Push the meat to one side of the skillet. Add diced onion and bell pepper. Sauté for 5 minutes, until soft and slightly caramelized. Stir in garlic and Worcestershire sauce. Simmer for 2 more minutes.
  • Reduce heat to low. Lay provolone slices on top and let melt gently over the meat and veggies.
  • Toast your sandwich rolls in a dry skillet or oven until lightly crisped, if desired.
  • Spoon the hot filling into each roll. Add spicy aioli if using. Press slightly and serve warm.

Notes

Use hot Italian sausage or add diced jalapeños for a spicier version. Make the filling a day ahead and reheat with a splash of broth. Leftovers work great over rice or stuffed into bell peppers for a low-carb option.
