Potato Base
- 2 lb russet potatoes peeled and sliced 1/8 inch thick
- 2 cups heavy cream
- 2 tbsp butter
- 2 cloves garlic minced
- 1.5 cups shredded cheddar cheese
- 0.5 cups Parmesan cheese grated
- 1 tsp salt or to taste
- 0.5 tsp black pepper
- 1 tsp fresh thyme chopped
Preheat your oven to 375°F and butter a baking dish.
Slice the potatoes thinly, about 1/8 inch thick, for even cooking.
In a saucepan, heat butter, cream, garlic, salt, and pepper until warm and fragrant.
Layer half of the potatoes in the baking dish, pour half of the cream mixture over, and sprinkle with half the cheeses.
Repeat with remaining potatoes, cream, and cheese. Sprinkle thyme on top.
Bake uncovered for 50 to 55 minutes until golden and bubbly on top.
Let rest for 10 minutes before serving to allow the creamy sauce to set.
- Use a mandoline for even potato slices.
- Add caramelized onions for extra flavor or mix Gruyere into the cheese for depth.
- Avoid low-fat cream for best results.
