Ingredients
  

Potato Base

  • 2 lb russet potatoes peeled and sliced 1/8 inch thick
  • 2 cups heavy cream
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups Parmesan cheese grated
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme chopped

Instructions
 

  • Preheat your oven to 375°F and butter a baking dish.
  • Slice the potatoes thinly, about 1/8 inch thick, for even cooking.
  • In a saucepan, heat butter, cream, garlic, salt, and pepper until warm and fragrant.
  • Layer half of the potatoes in the baking dish, pour half of the cream mixture over, and sprinkle with half the cheeses.
  • Repeat with remaining potatoes, cream, and cheese. Sprinkle thyme on top.
  • Bake uncovered for 50 to 55 minutes until golden and bubbly on top.
  • Let rest for 10 minutes before serving to allow the creamy sauce to set.

Notes

  • Use a mandoline for even potato slices.
  • Add caramelized onions for extra flavor or mix Gruyere into the cheese for depth.
  • Avoid low-fat cream for best results.
