Cookie Dough
- 2 ripe bananas
- 1/4 cup coconut oil
- 1/3 cup honey
- 1 egg
- 1/4 cup Greek yogurt
- 1 tsp banana extract
- 1/2 packet vanilla pudding mix
- 1 1/2 cups whole wheat flour
- 1/2 tsp baking soda
Topping
- whipped cream for topping
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mash ripe bananas in a large bowl. Mix in coconut oil, honey, Greek yogurt, and egg until creamy.
Add banana extract, pudding mix, baking soda, and flour. Stir just until combined.
Scoop dough onto baking sheet and flatten slightly with a spoon.
Bake for 9 to 11 minutes until edges are lightly golden and centers are soft.
Let cookies cool completely, then top with whipped cream. Chill for at least 30 minutes before serving.
