Healthy Crab Crostini Appetizer Recipe

- - 8 oz fresh lump crabmeat
- - 1/4 cup Greek yogurt
- - 1 tbsp fresh lemon juice + 1/2 tsp zest
- - 2 tbsp scallions finely chopped
- - 1 tsp Dijon mustard
- - 1 tbsp capers rinsed
- - 1 tbsp chopped fresh dill or chives
- - 1 whole grain baguette sliced
- - Olive oil for brushing
- - Salt & pepper to taste
- - Optional: smoked paprika for garnish
Gently mix crabmeat, yogurt, lemon juice and zest, scallions, mustard, capers, and herbs. Season to taste.
Chill mixture in fridge for 30 minutes.
Slice baguette and brush with olive oil. Toast at 375°F for 7–9 minutes.
Spoon chilled crab mix on each toast slice. Garnish optionally. Serve immediately.
- Use real lump crab for best flavor.
- Make topping ahead, assemble just before serving.
- Add Parmesan and broil for a warm version.
