Ingredients
  

  • - 1 lb ground beef
  • - 1/2 cup diced onion
  • - 2 garlic cloves minced
  • - 2 tbsp all-purpose flour
  • - 1 cup beef broth
  • - 1 tsp onion powder
  • - 1 tsp garlic powder
  • - 1 tbsp Worcestershire sauce
  • - Salt & pepper to taste
  • - 1 cup sour cream
  • - 3 cups diced russet potatoes
  • - 1 cup diced carrots
  • - 3 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 400°F and grease a 9x13” casserole dish.
  • In a skillet over medium heat, brown ground beef with onion and garlic.
  • Stir in flour, then slowly add broth and seasonings.
  • Mix in 1 cup cheese and sour cream until creamy.
  • Add potatoes and carrots, stir well.
  • Transfer mixture to dish, top with remaining cheese.
  • Cover with foil and bake for 30–35 minutes, or until potatoes are fork-tender.
  • Sprinkle parsley and serve hot.

Notes

  • You can swap sour cream with Greek yogurt or cream of mushroom soup.
  • For extra protein, add a can of beans or chopped beef bacon.
  • Dice potatoes small to ensure even cooking.
  • To freeze, bake fully and cool before wrapping.
