- - 1 lb ground beef
- - 1/2 cup diced onion
- - 2 garlic cloves minced
- - 2 tbsp all-purpose flour
- - 1 cup beef broth
- - 1 tsp onion powder
- - 1 tsp garlic powder
- - 1 tbsp Worcestershire sauce
- - Salt & pepper to taste
- - 1 cup sour cream
- - 3 cups diced russet potatoes
- - 1 cup diced carrots
- - 3 cups shredded cheddar cheese
Preheat oven to 400°F and grease a 9x13” casserole dish.
In a skillet over medium heat, brown ground beef with onion and garlic.
Stir in flour, then slowly add broth and seasonings.
Mix in 1 cup cheese and sour cream until creamy.
Add potatoes and carrots, stir well.
Transfer mixture to dish, top with remaining cheese.
Cover with foil and bake for 30–35 minutes, or until potatoes are fork-tender.
Sprinkle parsley and serve hot.
- You can swap sour cream with Greek yogurt or cream of mushroom soup.
- For extra protein, add a can of beans or chopped beef bacon.
