- - 2 boneless skinless chicken breasts sliced thin
- - 2 tbsp olive oil
- - 3 medium zucchinis spiralized
- - 3 garlic cloves minced
- - 4 cups baby spinach
- - Salt pepper, dried thyme, crushed red pepper to taste
- - 1/4 cup shredded parmesan optional
Heat olive oil in a skillet. Season chicken with salt, pepper, thyme, and cook until browned and cooked through. Remove from pan.
Sauté garlic in the same skillet for 30 seconds.
Add spinach and stir until wilted.
Add zucchini noodles and stir for 1–2 minutes.
Return chicken to pan, toss everything together.
Serve topped with parmesan and black pepper.
