Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, rub them with butter and sprinkle with salt. Bake directly on the oven rack for 50 to 60 minutes until soft inside and crispy outside.
While the potatoes bake, cook the steak bites. Heat a skillet over medium heat, add some butter, and sear the steak pieces for about 2–3 minutes per side. Season with salt and pepper, then set aside.
Slice the baked potatoes open, fluff the insides with a fork, and mix in butter, sour cream, and shredded cheddar cheese.
