  • 2 russet potatoes washed and dried
  • 1 cup steak bites cooked and seasoned
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese shredded
  • 2 tbsp butter divided for potatoes and skillet
  • 2 green onions sliced
  • 2 tbsp bacon bits
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, rub them with butter and sprinkle with salt. Bake directly on the oven rack for 50 to 60 minutes until soft inside and crispy outside.
  • While the potatoes bake, cook the steak bites. Heat a skillet over medium heat, add some butter, and sear the steak pieces for about 2–3 minutes per side. Season with salt and pepper, then set aside.
  • Slice the baked potatoes open, fluff the insides with a fork, and mix in butter, sour cream, and shredded cheddar cheese.
  • Top with cooked steak bites, bacon bits, and sliced green onions. Return to the oven for 5 minutes to melt the cheese.

Notes

Use leftover steak for quicker prep. You can also microwave the potatoes for 10 minutes and finish in the oven to save time.
