  • 1 lb ground beef
  • 1 cup low sugar marinara sauce
  • 1 1/2 cups mozzarella cheese shredded
  • 20 slices pepperoni
  • 1 green bell pepper diced
  • 2 cups cauliflower rice
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F and lightly grease a casserole dish.
  • In a large skillet, heat olive oil and cook ground beef until browned. Drain excess fat.
  • Add marinara sauce and Italian seasoning to the meat. Let it simmer for 5 minutes.
  • Spread cauliflower rice at the bottom of the casserole dish. Spoon the beef mixture on top.
  • Add bell pepper and a generous layer of mozzarella cheese.
  • Top with pepperoni slices and bake for 25 to 30 minutes until bubbly and golden.

Notes

Do not skip draining the beef. Too much grease makes the casserole watery. Also, avoid overbaking—the cheese should stay creamy and stretchy.
