  • 1 tbsp olive oil
  • 6 slices beef bacon chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/4 cup bourbon optional
  • 3 cups black eyed peas cooked or canned, drained and rinsed
  • 2 cups chicken broth
  • 2 tbsp maple syrup
  • 1 tsp smoked paprika
  • to taste salt
  • to taste black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped beef bacon and cook until golden and crispy, about 5 minutes.
  • Remove bacon and set aside. In the same pot, sauté chopped onion and minced garlic until fragrant and soft.
  • Pour in bourbon and let bubble for 30 seconds to cook off the alcohol.
  • Add black eyed peas, smoked paprika, chicken broth, and maple syrup. Stir well to combine.
  • Simmer uncovered for 20 to 25 minutes until peas are tender and creamy, stirring occasionally.
  • Return beef bacon to the pot and season with salt and black pepper. Simmer for 5 more minutes. Serve warm.

Notes

  • For a lighter version, use turkey bacon.
  • Skip the bourbon if desired substitute with apple cider or Worcestershire sauce for depth.
  • Serve with cornbread, rice, or collard greens.
