Ingredients
  

Lamb Chops

  • 8 lamb chops bone-in or loin chops

Marinade

  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp fresh rosemary chopped

To Serve

  • 1/2 cup Greek yogurt optional, for serving

Instructions
 

  • In a bowl, mix olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper. Whisk well to create a smooth marinade.
  • Place lamb chops in a shallow dish and pour the marinade over them. Rub well so every piece gets coated. Let them rest for 30 minutes or up to 4 hours in the fridge.
  • Preheat your grill or pan to medium-high heat. Cook lamb chops for 3 to 4 minutes on each side, until browned outside and juicy inside.
  • Let the lamb rest for 5 minutes before serving. Spoon over Greek yogurt or your favorite lamb sauce for added flavor.

Notes

Do not skip marinating the lamb — it enhances tenderness and flavor. Pat dry before grilling to ensure a good sear. Avoid overcooking to keep the meat juicy.
