  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 can Rotel tomatoes with green chilies
  • 1/2 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt or to taste
  • 4 oz cream cheese softened
  • 1/2 cup shredded Monterey Jack or cheddar cheese

Instructions
 

  • Pat the chicken dry and season both sides with salt, chili powder, cumin, and garlic powder. Let it rest for 10 minutes.
  • Heat olive oil in a large skillet over medium heat. Sear the chicken for 4–5 minutes per side until golden.
  • Add Rotel tomatoes and chicken broth to the skillet. Reduce heat, cover, and simmer for 15–18 minutes.
  • Stir in the cream cheese until fully melted and smooth.
  • Sprinkle shredded cheese over the top, cover briefly until melted. Serve warm with sauce spooned over the chicken.

Notes

For variations, add black beans or corn, use chicken thighs for richer flavor, or top with sour cream and green onions. Pairs well with rice or tortillas.
