Caprese Skewers
- 24 cherry tomatoes mixed colors if available
- 12 ciliegine mozzarella balls patted dry
- 24 fresh basil leaves small or halved if large
- 1 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze
- salt and freshly cracked pepper to taste
Start with a cherry tomato and slide it onto the skewer.
Fold a small basil leaf and add it to the skewer, followed by a mozzarella ball.
Add another basil leaf and finish with a cherry tomato to create a wreath-like shape.
Repeat to make 12 skewers. Chill if making ahead (up to 4 hours).
Just before serving, drizzle lightly with olive oil and balsamic glaze. Sprinkle with salt and pepper to taste.
