One-Pan Cheesy Meat & Potato Skillet

Ingredients
  

  • - 1 lb ground beef or sausage
  • - 1 ½ lbs Yukon Gold potatoes diced small
  • - 1 medium onion diced
  • - 3 cloves garlic minced
  • - 1 bell pepper diced
  • - 1 ½ cups shredded cheddar or Colby Jack cheese
  • - 1 tsp smoked paprika
  • - Salt and pepper to taste
  • - Optional: 1–2 tbsp beef broth for deglazing

Instructions
 

  • In a large cast iron skillet over medium heat, cook ground beef or sausage until browned. Drain excess fat if needed.
  • Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
  • Toss in the diced potatoes. Cook uncovered for 10–12 minutes, stirring occasionally until golden and fork-tender.
  • Add bell peppers, smoked paprika, salt, and pepper. Stir and cook another 3 minutes.
  • Sprinkle shredded cheese over the top. Cover skillet and turn off heat. Let cheese melt for 5 minutes.
  • Serve hot, garnished with green onions or a dollop of sour cream if desired.

Notes

  •  Use pre-boiled potatoes to speed things up.
  • Turkey or veggie sausage can be used instead of beef.
  • Avoid overcrowding the pan; use a large skillet.
  • Leftovers reheat well in the oven or skillet.
