- - 1 lb ground beef or sausage
- - 1 ½ lbs Yukon Gold potatoes diced small
- - 1 medium onion diced
- - 3 cloves garlic minced
- - 1 bell pepper diced
- - 1 ½ cups shredded cheddar or Colby Jack cheese
- - 1 tsp smoked paprika
- - Salt and pepper to taste
- - Optional: 1–2 tbsp beef broth for deglazing
In a large cast iron skillet over medium heat, cook ground beef or sausage until browned. Drain excess fat if needed.
Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
Toss in the diced potatoes. Cook uncovered for 10–12 minutes, stirring occasionally until golden and fork-tender.
Add bell peppers, smoked paprika, salt, and pepper. Stir and cook another 3 minutes.
Sprinkle shredded cheese over the top. Cover skillet and turn off heat. Let cheese melt for 5 minutes.
Serve hot, garnished with green onions or a dollop of sour cream if desired.
