Ingredients

  • 8 oz short pasta such as penne or fusilli
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • salt and black pepper to taste

Instructions
 

  • Cook the pasta in salted boiling water until just al dente, then drain and set aside.
  • In a large skillet, heat olive oil and butter. Add the mushrooms and cook until golden brown.
  • Stir in garlic and sauté until fragrant, about 1 minute.
  • Add spinach and let it wilt into the mushroom mixture.
  • Pour in the heavy cream and simmer until slightly thickened.
  • Stir in Parmesan cheese until creamy and smooth.
  • Add the cooked pasta and toss until evenly coated with sauce.
  • Season with salt and black pepper to taste. Serve hot.

Notes

Do not overcook the pasta to prevent mushiness. Always brown the mushrooms for maximum flavor. Add Parmesan at the end to keep the sauce smooth and creamy.
