- 1 tbsp olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 cup vegetable broth
- 1 cup crushed tomatoes
- 1 tsp smoked paprika
- salt and black pepper to taste
Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, and cook until fragrant, about 3 minutes.
Add the frozen black-eyed peas directly into the pan. Stir to coat with the aromatic oil mixture.
Pour in the vegetable broth and crushed tomatoes. Bring to a simmer, then reduce heat to low.
Sprinkle in smoked paprika, salt, and pepper. Stir occasionally and cook for 20 minutes until peas are tender and sauce thickens.
