  • 3 cups frozen black-eyed peas
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup vegetable broth
  • 1 cup crushed tomatoes
  • 1 tsp smoked paprika
  • salt and black pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, and cook until fragrant, about 3 minutes.
  • Add the frozen black-eyed peas directly into the pan. Stir to coat with the aromatic oil mixture.
  • Pour in the vegetable broth and crushed tomatoes. Bring to a simmer, then reduce heat to low.
  • Sprinkle in smoked paprika, salt, and pepper. Stir occasionally and cook for 20 minutes until peas are tender and sauce thickens.
  • Taste and adjust seasoning if needed. Serve warm, topped with a drizzle of olive oil or a sprinkle of herbs.

Notes

  • Rinse frozen peas briefly before adding to pan.
  • Add chili flakes for a spicier twist.
  • For thicker consistency, mash a few peas at the end. Store leftovers in an airtight container up to 3 days.
