Ingredients
  

  • pounds 680 g skinless, boneless chicken breasts (or thighs)
  • ¼ cup 60 ml honey
  • ¼ cup plus 1–2 tablespoons 75–90 ml Dijon mustard
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon onion powder

Instructions
 

  • Mix salt, pepper, paprika, and onion powder in a small bowl.
  • Rub the spice mixture evenly over both sides of the chicken.
  • Whisk honey, ¼ cup Dijon mustard, and minced garlic until smooth.
  • Taste and add 1–2 more tablespoons mustard if desired.
  • Place seasoned chicken in a 4-quart slow cooker.
  • Pour the honey-mustard mixture over the chicken, coating each piece.
  • Cover and cook on Low for 2 hours 30 minutes until internal temp reaches 165°F.
  • Transfer chicken to a cutting board and shred with two forks.
  • Return shredded chicken to the slow cooker and stir to coat with sauce.
  • Taste and stir in 1–2 more tablespoons Dijon mustard if desired.

  • Use whole grain Dijon for extra texture; swap 1:1.
  • Add 1 tablespoon apple cider vinegar for brightness.
