Spicy Peanut Brittle

Ingredients
  

  • 1 cup of sugar
  • 1 cup of corn syrup
  • 1/4 cup of water
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon baking soda
  • 3/4 cup salted peanuts

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • In a large, heavy-bottomed saucepan, combine the sugar, corn syrup, water, butter, vanilla, and cayenne. Stir once to mix, then stop stirring.
  • Cook over medium heat without stirring. Let it bubble and darken to a golden amber color, gently swirling the pan or pressing down crystals if needed.
  • Once the mixture reaches a rich golden stage, remove from heat. Quickly stir in the baking soda and peanuts—the mixture will foam up.
  • Immediately pour onto the prepared sheet and let it spread naturally.
  • Cool for 15 minutes at room temperature, then break into shards and enjoy.

Notes

  • For a deeper flavor, use dark corn syrup.
  • Store in an airtight container at room temperature for up to 2 weeks.
  • Avoid humidity to keep it crisp!
