Cut chicken into small cubes and season lightly with salt and pepper. Warm a pan over medium heat and drizzle a bit of oil.
Add the chicken and cook until golden and tender. Remove from the pan and set aside.
In the same pan, toss garlic and ginger for a few seconds. Add soy sauce, brown sugar, and cornstarch mixed with water. Stir until thick and shiny.
Return the chicken and add broccoli and bell peppers. Stir and coat everything in the sauce. Let it simmer for 3 to 4 minutes until vegetables are crisp tender.
