Ingredients
  

  • - 1 lb ground beef
  • - 1/2 cup almond flour
  • - 1/4 cup grated Parmesan plus extra for topping
  • - 1 large egg
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - 1 tsp Italian seasoning
  • - Salt and pepper to taste
  • - 2 cups sugar-free tomato sauce
  • - 1 1/2 cups shredded mozzarella cheese
  • - 1 tbsp olive oil

Instructions
 

  • Preheat oven to 400°F and grease a baking dish with olive oil.
  • Mix ground beef, almond flour, Parmesan, egg, and seasonings in a bowl.
  • Form into meatballs and arrange in dish.
  • Pour tomato sauce evenly over the meatballs.
  • Top with mozzarella and extra Parmesan.
  • Bake for 20 to 25 minutes until cheese is melted and golden, and meatballs reach 160°F.

Notes

  • Broil for 2 minutes at the end for extra golden cheese.
  • Use part-skim mozzarella to reduce greasiness.
  • Add fresh basil after baking for brightness.
  • Store leftovers in fridge for up to 4 days.
