  • 1 lb black eyed peas rinsed
  • 12 oz smoked sausage sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Rinse the black eyed peas and set aside. In a large pot, heat olive oil over medium heat.
  • Add onion and garlic. Cook until soft and fragrant, about 3 minutes.
  • Stir in smoked sausage and cook for 5 minutes to release flavor.
  • Add peas, chicken broth, bay leaf, salt, and pepper. Bring to a gentle boil.
  • Reduce heat, cover, and simmer until peas are soft, about 45 minutes. Stir occasionally to prevent sticking.
  • Remove bay leaf and taste for seasoning before serving.

Notes

For best results, simmer gently to maintain the peas’ creamy texture. You can soak peas for faster cooking, and swap sausage with veggies and use vegetable broth for a vegetarian version.
