  • 1 package instant vanilla pudding mix
  • 1 cup whipped topping
  • 1/2 cup shredded coconut
  • 1 tsp vanilla extract
  • 1/2 cup crushed vanilla wafers or graham crackers

Instructions
 

  • In a large bowl, whisk together the instant pudding mix and coconut milk until smooth.
  • Fold in the whipped topping gently until fully combined and fluffy.
  • Slice the bananas and layer them in the bottom of your serving dishes or pudding cups.
  • Spoon half of the pudding mixture over the bananas, then sprinkle crushed wafers or graham crumbs on top.
  • Add the remaining pudding layer and finish with a sprinkle of shredded coconut.
  • Chill for at least 1 hour before serving for best texture and flavor.

Notes

  • For a lighter version, use low-fat coconut milk and Greek yogurt instead of whipped topping.
  • Add a splash of lime juice to the bananas to keep them from browning.
