Tuscan Shrimp with Spinach

  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes sliced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 3 cups fresh spinach
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add shrimp, season lightly with salt and pepper, and cook until pink on both sides. Remove and set aside.
  • In the same skillet, add garlic and sun-dried tomatoes. Cook until fragrant, about 1 minute.
  • Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and sauce thickens.
  • Add spinach and stir until just wilted.
  • Return shrimp to the skillet, toss gently in the sauce, and cook for 2 minutes until everything is coated and warm.

Notes

  • Do not overcook the shrimp, as they turn rubbery fast.
  • Use large shrimp for the best texture and pat them dry before cooking.
