Main Ingredients
- 2 cups cooked white beans cannellini or Great Northern, drained and rinsed
- 1/3 cup dried cranberries
- 1 tsp fresh rosemary finely chopped
- 1 tsp fresh thyme finely chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice freshly squeezed
- salt and pepper to taste
Optional Toppings
- 2 tbsp toasted pine nuts or walnuts or pecans
Drain and rinse the white beans gently. Pat dry to remove excess moisture.
In a large bowl, combine beans, cranberries, chopped rosemary and thyme, and pine nuts if using.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour the dressing over the bean mixture and gently toss to coat without mashing the beans.
Cover and refrigerate for at least 1 hour to allow flavors to blend. Serve chilled or at room temperature.
- Use endive leaves, toasted baguette, or cheese board pairings for serving.
- Make it a day in advance for best flavor.
- Avoid overdressing and always use fresh herbs for best results.
